Rose Water Distillation: The Traditional Deg Bhapka Process

The Deg Bhapka method is a traditional Indian distillation technique used for producing pure rose water and attar, especially in the historic perfume city of Kannauj. This centuries-old process uses simple copper vessels and natural cooling to gently extract the fragrance and essence from fresh rose petals. 1. Preparation of Fresh Rose Petals

• Water is added to the petals to start the distillation mixture.

2. Heating in the Deg (Copper Still)

The Deg is a traditional copper pot placed over a wood fire.

• The vessel is tightly sealed with clay to prevent vapor leakage.

• As the mixture heats, the water and rose oils begin to evaporate.

• The aromatic steam carries the natural rose essence.

This slow heating method protects the delicate fragrance compounds from being damaged.

3. Vapor Transfer Through the Bamboo Pipe

The aromatic steam travels through a bamboo pipe called the Chonga that connects the Deg to another vessel called the Bhapka.

• The pipe allows the fragrant vapor to move safely to the condensation chamber.

• This step ensures the aroma remains pure and uncontaminated.

4. Condensation in the Bhapka

The Bhapka is a receiving vessel kept inside a cool water tank.

• Cold water continuously surrounds the Bhapka.

• When the steam enters this chamber, it cools and condenses into liquid.

• The resulting liquid is pure rose water (Gulab Jal).

If the process is used for attar making, the condensed vapor mixes with sandalwood oil to capture the fragrance.

5. Collection and Storage

Once distillation is complete:

• The rose water is carefully collected from the Bhapka.

• It is filtered and stored in glass or metal containers.
